With St. Patrick’s Day around the corner, we thought it would be fun to round up some fun, green, and different recipes for you. This isn’t your typical Irish fare.
No, these recipes are more like that pot of gold but for your tastebuds! So put on your green shirt and try these lucky St. Patrick's Day recipes today!
1. Lucky Charms Marshmallow Treats
These festive Rice Krispy treats are more fun than they are Irish. However, you won’t hear any complaints if these make an appearance in your St. Pattie’s Day spread.
Rice Krispies treats are classic, and the sweet addition of Lucky Charms makes them “magically delicious”!
2. Irish Nachos
Irish nachos are an incredible appetizer or finger food. All your favorite nacho toppings are piled high on top of thinly sliced potatoes rather than chips!
Though not traditionally Irish, they are frequently on the menu at Irish pubs. If you ask me, I prefer potatoes to chips any day!
3. Irish Coffee
For those partaking in the fun adult aspect of St. Pattie’s day, an Irish coffee makes a great start (or end) to the party. This hot cocktail warms the soul.
The Irish whiskey is mellowed out by velvety cream or whipped cream, so even if you aren’t usually a liquor drinker, you may want to make an exception here! It feels almost like hot chocolate, but way more fun.
4. Rainbow Rice Krispies Treats
You know the old saying “if it ain’t broke, don’t fix it”? Well, that applies here to these show-stopping Rice Krispies treats!
The only thing different with this recipe is the fun and festive colors. At their core, they are the traditional treats that everybody loves and they are always a hit!

St. Patrick's Day Recipes: Lucky Charms Marshmallow Treats (+More Great Ideas!)
Ingredients
- ⅝ cup butter (1 stick + 2 tablespoons, 10 tablespoons total - plus an extra ½ tablespoon for 9x13 dish)
- 14 oz mini marshmallows (approximately 7 cups mini marshmallows - or 56 regular marshmallows)
- 1 pinch salt (up to ½ teaspoon if using unsalted butter)
- 1 teaspoon vanilla extract (I prefer clear for these treats)
- 6 cups Lucky Charms cereal
(Note: 2x or 3x only changes the ingredient list)
Instructions
- To Microwave: Combine marshmallows, butter, and salt in a large microwave-safe bowl.On the Stovetop: Place the butter in a large saucepan or pot.
- To Microwave: Heat the marshmallow mixture for 1 minute, stir, and continue heating in 30-second increments. stir between each heating until the marshmallows are melted.On the Stovetop: Heat the pan over medium heat to melt the butter, then add salt and marshmallows. Stir until the marshmallows have melted.
- Add the vanilla and a handful of extra marshmallows (optional).
- Add the Lucky Charms cereal and fold into the marshmallow mixture.
- Transfer the mixed cereal treats into a buttered 9x13 baking pan or dish. Press down gently with fingers or a spatula (that has been buttered or wet down) to reach all corners. Do not pack down firmly. Set aside and allow to cool and set up completely before serving.
